I believe "pot plant" is actually just two nouns making a phrase, not
an adjective use of "pot" (this would be the slang meaning of pot as
marijuana).  A plant in a pot is a "potted plant", and I can't
think of any other use of "pot" as an adjective.  Of course, it can be a 
verb ("I will pot the plant in the pot"), which still illustrates
the problem quite nicely.
