I posted a similar question recently, and also looked at the
loadlin and bootlin (a simple predecessor of loadlin)
documentation and source (of bootlin).  My untutorted impression
is that both make assumptions that are relevant only to Linux,
and probably wouldn't work with Minix withoutrewriting parts of
them, but that might not be so hard.

Since then, I looked at

which is the home page for the Linux 8086 port project.  It
sounds to me like they tested their bootlin/loadlin-like utility
by getting it to load Minix.  It's also possible you'd be
interested in their work because they're producing a very small,
stripped down Linux (though probably not as featureful as you'd
like).
